Fresh-Baked Pastries
The pastry case changes daily and is worth checking every visit. Scones (cranberry white chocolate or blueberry white chocolate), cinnamon rolls, muffins, and potica coffee cake are regulars. Biscotti in four flavors: cinnamon pecan, cranberry white chocolate, almond, dark chocolate white chocolate. Fritter bread in three: apple, blueberry, rhubarb (Thursday through Saturday). Filled croissants on Fridays and Saturdays. Made in Elk River with the same no-preservative standard as every loaf. In and out the same day it was made.

Diamond City Bread has been baking in downtown Elk River since 1996, in a place with a history as layered as its loaves. The bakery sits in the lower level of what was once The Bank of Elk River, founded in 1885 and the oldest bank in Sherburne County. The original vault is still there. After decades of Mississippi River flooding raised the street grade outside, the old ground floor became the lower level it is today. Elk River grew up around it. So did we.

Our bread contains no preservatives, so it is best within 2 to 4 days depending on the variety. Sourdoughs hold a little longer than focaccia or baguettes. Store in a paper bag at room temperature. Now Hiring at Diamond City Bread
We are a small, hardworking bakery that has been part of Elk River since 1996. If you love bread, love people, and want to build something real — we want to hear from you.
We're hiring someone who wants to learn this trade and build a long-term career. No experience required. We'll teach you everything: breads, pastries, shaping, mixing, timing. What we can't teach is showing up in the middle of the night and caring about what comes out of the oven.
This is a full-time position. Hours are overnight, typically somewhere between 11pm and 9:30am depending on the day. You'll work early mornings, mostly on your own, and occasionally alongside the team. You need to be comfortable asking questions when something isn't clear, keeping a clean workspace, and talking to customers when the doors open.
If you're creative, detail-oriented, and looking for a real career (not just a job), we'd like to meet you.
We're looking for someone reliable who wants to learn the bakery trade from the ground up. You'll help with pastry prep, keep the kitchen clean, and work the counter when customers come in. We'll train you on everything.
Most shifts run roughly 2pm to 7pm on weekdays. Some Saturday availability is needed (not every Saturday) for retail help, typically 7am to 4pm or so. Hours are flexible and we'll work with your schedule.
You'll spend time working on your own and alongside the team. Either way, you need to stay focused, keep things clean, and speak up when something isn't clear.
